Most are completely vegan, some are vegetarian with lots of vegan options and room to modify. The vegetarian ones usually just have an optional cheese or sour cream garnish, which is easy to make vegan.

Vegan Rice Bowls

We love to make vegan “bowls” and they are so easy. The key is Trader Joe’s frozen rice packets and “Everything but the Bagel” (aka “EBTB”) seasoning. My mom likes their cilantro lime seasoning too. TJ’s has brown rice and white rice packets that you throw in the microwave for 3 minutes. Add beans, corn, any veggies you like, and baked tofu if you have it for extra protein. We sometimes cook a vegan burger in the skillet and cut it up and throw it in for flavor. Even better news: you can turn it into a burrito! Add salsa if you like! Just throw all this in a flour tortilla. Here is an example of the perfect bowl:
1 packet Trader Joe’s frozen rice
1/2 c. cooked black beans
1/2 c. cooked frozen corn
1/4 c. chopped fresh tomatoes
2T sliced avocado
1/2-2 cups of your fave sautéed or steamed veggies (peppers, mushrooms, even sweet potatoes).
Sprinkle with EBTB seasoning.
Yum.
Roasted Potatoes

Preheat the oven to 375. Scrub about 30 red potatoes (or whatever potatoes you like best) and cut them in bite-sized wedges. Drizzle about 2T olive oil, 1tsp of fresh or dry rosemary, and 1 tsp. salt. Sprinkle with pepper. Stir and cook in the oven for approximately 35 minutes or until they are just beginning to brown and tender when pressed with a fork. These are so easy and sooooo good!
Smoothies!

We always have organic frozen berries, peaches, mangoes, etc. in our freezer along with bananas for smoothies. Also, we buy a big batch of fresh spinach or kale and put a handful in little compostable bags and stick them in the freezer to add to smoothies. You can’t taste it at all but it is so healthy. We also love Orgain plant-based Vanilla Protein Powder (Costco, Amazon, most grocery stores). We also have almond milk and oat milk at all times. We mostly just guess at the measurements but here is how we make smoothies:
1 c. frozen berries/fruit of choice
1 scoop Orgain protein powder
1 c. fresh or frozen spinach
1 banana
1 c. water (juice has too much sugar)
1 c. oat/almond milk
1/2 c. ice
Blend all the ingredients in a blender. Sooooo good!
Vegan Black Bean Brownies
These brownies are absolutely delicious, vegan, and gluten-free! You will not believe how amazing and easy this recipe is! Go make yourself a treat!
